Quinoa Beetroot & Kale Salad




Ingredients

For the salad:
1 cup white quinoa
A handful of curly kale
250 grams of carrots
250 grams of beet root
50 grams of feta cheese
Pine nuts

For the dressing, throw the following into an empty jar-
1 tbsp honey
2 tbsp lemon juice
1 tbsp balsamic vinegar
1 tbsp extra virgin olive oil
Salt & pepper to taste
2 tbsp left over juice from beetroot

Close the lid and give it a good old shake! And your dressing is ready.





Cook the beetroot by boiling and just as it goes tender chuck it in a baking tray along with carrots (sliced & diced) with some olive oil and let the vegetables roast for about 30 minutes at 200 degrees celsius.

Meanwhile clean the quinoa under a running tap thoroughly and then slow cook it on the hob for about 20 minutes till it gets fluffy and tender. For 1 cup of quinoa use 2 cups or slightly more water.

5 minutes before quinoa absorbs all the water add in kale as well. Let the quinoa & kale rest for a few minutes covering the pot with a lid.

Lightly toast a handful of pine nuts.

And now its just an assembly job! Throw in the quinoa and kale in a salad bowl. Add carrots, beetroot, pine nuts and then the dressing. Mix it well with salad tongs and you will see the quinoa turn into a beautiful beetroot ish  shade. Finally, crumble feta cheese on top!



The salad tastes great even without feta, so all the healthy ones can skip it if they want to ;) Let us know if you get to try this recipe and if you enjoyed it.

Bedroom Styling With Mark Home India



Anyone who has ever visited my room knows that it was crying for a make over. Not anymore though because I have tweaked it around just a bit. And dare I say that I  am quite pleased with the results! My parents house is quite old now and the interiors are very retro but redoing this completely would have cost a fortune. So I decided to go for tiny additions instead!

To make my room look colorful, cosy & festive, I got a bright red bed sheet set which consists of one sheet, one duvet cover and four pillow cases.









My room literally came to life because of this vivid pop of red!

Winter months can be extremely dull & depressing but with a bed sheet this bright it feels like Christmas every day :D



Somewhat cleared my super messy all purpose corner as well ;)






My bed sheet set is from Mark Home and I am absolutely in love with their range of home linen. In fact, I am thinking of getting a blue bed sheet set as well! Can I also just take a moment to mention that the quality of the fabric is amazing and feels super luxurious. The pillow case is also very soft and gentle on the facial skin. Any beauty enthusiast will be very pleased to hear that ;)

New Delhi Palate Fest 2014

How would you feel if you had an option to walk around on a winter evening, amidst a well dressed collective of people, dine alfresco, have some good music in the background and soak in soft breeze?
Well, Delhi has it own version of winter fun now, Palate Fest! In the heart of Delhi, lies Nehru Park, a quaint spread of lush green, allowing you to disconnect from the outside. The food festival is a delightful walk through with over 40 pop up restaurants ranging from fine dining to food court style. If you step in once the sun goes down and the lights start to shimmer, the place comes alive and how!

Goodness Gracious Greens

Lately, I have really been into healthy smoothies and in particular the "greens" have been making frequent appearances on our social media channels.



This one I made today; conveniently forgot to photograph the process, however took the camera out in time for the finished smoothie ;)

This is really simple and has only three ingredients — spinach, grapes and pears! I haven't taken the pains to measure the ingredients just eyeballed them. And this is a lot of smoothie for one person!

Method:

Blend together spinach, grapes and 1 pear in a blender. Add water to make it more liquid!

Easy peasy lemon squeezy! Enjoy ;)
